Chop 1 carrot, 1
onion and 1 stalk of celery. Put them into a pot
together with 600g of chicken breast. Cover with cold water, cook for 20 minutes
.
Wash 300g of broccoli
florets. Blanche for 8 minutes and drain.
Wash 2 tomatoes,
cut into wedges.
Cut the chicken and vegetables into cubes and put them into a
large bowl. Add the broccoli and tomatoes and season with 125g of yoghurt mixed with 1
tablespoon of lemon juice and salt.
Sprinkle with 20g of
chopped chives and serve.
